A RHYL based cheese company has put a 'Rock Star' on the block.
Rock Star is the first vintage cave-aged Cheddar from award winning Snowdonia Cheese Company. The last cheese to be launched was Truffle Trove in September 2020.
The product is created by cheesemakers using a special recipe and profile before being transferred into the 500ft underground caves of a former slate mine situated in the remote mountains surrounded by the Snowdonia National Park and the protected Dark Sky Reserve.
It has to complete an 18-month maturation in a temperature-controlled environment and is sealed in slate chambers and encased in cobalt coloured wax to celebrate the rocks of the historical mines.
A spokesperson from the Snowdonia Cheese Company said: "The rich and savoury aroma of Rock Star offers cheese lovers an irresistibly smooth and creamy texture, with the occasional crunchy crystal. On the palate, its complex, umami flavours are as deep as the caverns it is aged in.
"Sweet caramel notes then lead to a long finish with a savoury tang and it is this time spent underground that gives Rock Star a deeper flavour and denser texture."
Earlier this year, Snowdonia Cheese won the prestigious Queen’s Award for Enterprise: International Trade. The award recognised the company’s "outstanding continuous growth".
Over the last six years, Snowdonia Cheese’s overseas sales have grown more than six-fold, selling to more than 25 countries including Canada, Australia and the United States, France and Germany.
